10/12/09 Katie's Healthy Eating Journal: Monday

What should you do if you don't feel full after a meal?  I always make sure to add lots of vegetables in order to feel full.  For example, last night I could have made things simple by just cooking chicken fajita's with chicken and a tortilla.  Instead, when I grilled the chicken in the skillet I made sure to add mushrooms, peppers, onions with a little cayenne pepper.  I love spicy foods so this was an easy seasoning without adding any calories.  Even after I had added all those veggies I went ahead and topped it with lettuce, jalapeno's, and tomatoes.  It was delicious and extremely filling.  Why didn't I add any rice (well, obviously, rice would have been really good...just like Chipotle!), however, my starch for dinner was already the tortilla.  Remember, it's all about balance.  If you are going to have a Laura's Lean Beef Burger can you have the bun and a side of pasta or potatoes?  No.  1 meat/1 starch; unless you're going to make a substitution earlier in the day.  But, I think that just gets too confusing so I try to stick to one of each of those food groups per meal.  Questions?  Send me one anytime!
